The whole beef fillet is the entire tenderloin muscle, running along the spine of the animal. It's the least worked muscle on the animal, which is why it's the most tender cut of beef. A whole fillet typically weighs 1.5-2.5kg and can be roasted whole, cut into individual fillet steaks, or portioned into a Chateaubriand from the centre section.
As a roasting joint, a 1.5kg whole fillet comfortably serves 4-6 people. A 2kg fillet will serve 6-8. It depends on how thickly you slice and what sides you're serving. Our butchers trim and tie it in-house so it's ready to go straight into the oven.
Bring to room temperature for 45-60 minutes. Season all over with sea salt. Sear in a very hot pan with beef dripping until browned on all sides — 2-3 minutes per side. Transfer to the oven at 200°C — approximately 20-25 minutes for medium-rare on a 1.5kg fillet. Rest for at least 10-15 minutes before carving. Use a meat thermometer — 52-54°C internal for medium-rare.
