The preparation involves making a smooth dough from rice flour and gram flour (besan), spiced with red chili powder, cumin seeds, sesame seeds, a pinch of asafoetida (hing), and salt. The dough is kneaded with water and a touch of melted butter or oil to achieve the right consistency.
Using a murukku press fitted with a ribbon-shaped disc, the dough is pressed directly into hot oil, forming long, flat strips. These are fried until golden brown and crisp, then drained to remove excess oil. The result is a crunchy, spicy, and flavorful snack that stays fresh for days when stored in an airtight container.
