In 2002, two friends, Manuel Rojas and Esther Requejo, decided to start growing coffee in a sustainable way. They acquired a plot of more than 105 hectares in the locality of Ortiz de Arrieta, in the Amazonas region, called Miraflores.

They liked this plot very much because of its excellent conditions for the cultivation of specialty coffee, especially thanks to its altitude and soil.

In order to produce coffee with unique qualities, from sustainable agriculture and intended for a niche market, the owners of the Miraflores plantation developed and adopted a plan for the cultivation of specialty coffees from unique varieties. Specific areas have been assigned to the following varieties: Geisha (1,900 – 2,000 masl), Bourbon (1,850 masl), Java (1,900 masl), Typica (1,700–1,800 masl) and SL-28 (1,800 masl), among others. The first harvests began in 2021.

Only red and wine-red cherries with a Brix degree between 18 and 23 are selected for this microlot. They are immersed for 12 hours in water at a temperature ≤ 14°C. Grains are selected according to their density, before going through a washing and flotation stage. The cherries are then pulped without water in cleaned fermentation tanks and subjected to 100 hours of anaerobic fermentation in submerged, sealed bags, equipped with an air locking system. The parchment coffee is then subjected to a final wash in the vat before a gentle solar drying that can last up to 25 days. 

The result in the cup is a celebration of perseverance, expertise, and this gorgeous Arabica variety. A coffee with an undeniable fruity character, supported by an elegant floral note. Multi-layered aromas and a beautiful taste balance, reminiscent of ripe and fresh fruit. Clean, crisp and juicy.
